Ingredients:

4 large Portobello mushrooms

1 cup cooked quinoa

1/2 cup diced bell peppers (red, yellow, or orange)

1/2 cup diced zucchini

1/4 cup diced red onion

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

Instructions:

Remove the stems from the Portobello mushrooms and gently scrape out the gills with a spoon to create space for the stuffing.
