Grilled salmon salad

Ingredients:

1 lb salmon fillet

6 cups mixed salad greens

1 cup cherry tomatoes, halved

1 cucumber, sliced

1 avocado, sliced

1/4 red onion, sliced

1/4 cup chopped fresh dill

1/4 cup extra-virgin olive oil

2 tbsp lemon juice

Salt and black pepper to taste

Instructions:

Preheat grill to medium-high heat.

Season salmon with salt and pepper. Grill salmon for 5-7 minutes per side or until cooked through. Set aside.

In a large bowl, combine salad greens, cherry tomatoes, cucumber, avocado, red onion, and fresh dill.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

Pour dressing over the salad and toss to coat.

Divide the salad among plates and top each with a piece of grilled salmon.

Serve immediately.
