Chickpea and avocado salad

Ingredients:

1 can of chickpeas, drained and rinsed

1 avocado, diced

1 red onion, diced

1 red bell pepper, diced

1/4 cup chopped cilantro

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Instructions:

In a large bowl, combine chickpeas, avocado, red onion, red bell pepper and cilantro.

In a separate small bowl, whisk together olive oil, lemon juice, salt and pepper.

Pour the dressing over the chickpea mixture and toss gently to coat.

Serve immediately or chill in the refrigerator until ready to serve.
